    Wow, this is such a moist cake. I added a little bit more baking power (1/4) teaspoon because it didn’t seem like enough for the recipe. The cake pan I used could have used 1 1/2 slices of pear to be honest but I spread the one pear in the recipe out and it was fine. The diced pear turned out to be about 1 1/2 pears in total for the gram weight, but if I had used 2 pears it would still work out. Definitely have to smooth out the top because there was no spread while baking and very little rise. I think this cake would work really well as a layer cake, but it has a very tender crumb. Very good recipe. You need to try it.
